    About this recipe: Nice on a summer's afternoon.

    Ingredients
    Serves: 8 

    • 1 (500g) packet uncooked penne pasta
    • 100g streaky bacon
    • 450g cooked prawns, peeled and deveined
    • 2 avocados, stones removed and diced
    • 120g grated Cheddar cheese
    • 200g mayonnaise
    • 60ml lemon juice
    • 2 tomatoes, diced
    • 1 teaspoon crushed red chilli flakes
    • 250g shredded lettuce

    Method

    1. Bring a large pot of lightly salted water to the boil. Place pasta in the pot, cook for 8 to 10 minutes, until al dente, and drain. Rinse under cold running water to cool.
    2. Place bacon in a frying pan over medium high heat, and cook until evenly brown. Drain and dice.
    3. In a large bowl, gently toss together the pasta, bacon, prawns, avocados, Cheddar, mayonnaise, lemon juice, tomatoes and red chilli flakes. Serve over lettuce.
