Stewed pears in red wine and port

    These stewed pears are can be served to hot or cold. They actually taste even better the next day! If the pears are not completely covered by the wine and port, you can add some water.

    Serves: 10 

    • 500ml red wine
    • 250ml port
    • 2 cinnamon sticks
    • 1 tablespoon lemon zest
    • 6 tablespoons granulated sugar
    • 10 firm but ripe pears - peeled, cored and quartered

    1. Heat wine and port in a large saucepan until it comes to the boil; simmer for 5 minutes over low heat. Add cinnamon, lemon zest and sugar; stir well until sugar dissolves.
    2. Carefully add the pears into the liquid; cover and simmer over very low heat for 2 hours, or until tender.
