Vanilla pastry cream

    I always make my own pastry cream to fill cakes or cream puffs. It can be used for many other scrumptious desserts, too!

    Serves: 1 

    • 375ml milk
    • 2 egg yolks
    • 100g caster sugar
    • 3 tablespoons plain flour
    • 1/2 teaspoon vanilla extract

    1. Heat milk in a hot water bath.
    2. In a small bowl beat egg yolks with sugar and milk till smooth. Slowly add 2 to 3 tablesooons of the hot milk and stir, then add this to the hot milk.
    3. Cook in the hot water bath till thickened, stirring every so often. Stir in vanilla and let cool, then refrigerate till using.
