Courgette pear cake

    It sounds a bit unusual but combining grated courgette and pear in this moderately sweet dairy free cake is really tasty. Squeeze the grated courgette to remove extra liquid before weighing.

    Ingredients
    Makes: 1 cake

    • 375g plain flour
    • 1 teaspoon cinnamon
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon salt
    • 180g grated courgette with skin (squeeze before weighing)
    • 1 ripe medium pear, peeled, cored and diced
    • 250ml vegetable oil
    • 100g caster sugar
    • 110g light brown soft sugar
    • 3 eggs
    • 2 teaspoons vanilla extract
    • 1 1/2 teaspoons minced root ginger
    • 1/8 teaspoon grated clove (optional)

    1. Preheat oven to 165 C / Gas 3-4. Grease a bundt cake tin.
    2. In a large bowl, mix flour, cinnamon, bicarb of soda, baking powder and salt.
    3. In another bowl, mix the rest of the ingredients.
    4. Mix the dry and the wet ingredients until just combined. Tip into the prepared tin.
    5. Bake in the preheated oven till a toothpick comes out clean, about 55 to 65 minutes.

    Tip

    Instead of cinnamon and ginger, use 1 1/2 teaspoons mixed spice.
