Couscous salad with prawn and salmon

    This couscous salad is packed with veg, plus prawns and tinned salmon for your daily dosage of protein.

    Ingredients
    Serves: 4 

    • 100g couscous
    • 1/2 cucumber, diced
    • 2 stalks celery, diced
    • 1/2 orange or yellow pepper, seeded and diced
    • 4 tablespoons sliced black olives
    • 100g cooked shelled prawns
    • 1 (213g) tin salmon
    • 1 teaspoon dried dill
    • 1 teaspoon minced parsley
    • 3 tablespoons olive oil
    • 3 tablespoons Italian dressing
    • 1 tablespoon red wine vinegar
    • salt and pepper

    Method

    1. Cook couscous following packet instructions. Let cool.
    2. In a large bowl mix cooked couscous, cucumber, celery, olives, prawns, salmon and herbs.
    3. In a small bowl whisk all remaining ingredients till smooth and toss with salad. Season to taste with salt and pepper.
