Easy gingerbread loaf

    To make this heavenly scented gingerbread, the spices are infused with honey, orange juice and orange zest.

    Makes: 1 gingerbread loaf

    • 130g water
    • 1 tablespoon orange juice
    • 150g honey
    • 2 teaspoons ground anise
    • 1 teaspoon ground ginger
    • 1/2 teaspoon ground cardamom
    • 1 pinch salt
    • 1 orange, zested
    • 100g butter
    • 150g plain flour
    • 1 heaped teaspoon baking powder

    1. Preheat oven to 180 C / Gas 4. Grease a loaf tin or line with greaseproof paper.
    2. In an bowl bring water, juice and honey to the boil. Add spices, salt and orange zest. Remove from the hob and add butter. Stir till melted, then leave to one side to steep for 15 minutes.
    3. in a bowl sift flour and baking powder. Strain the spice infusion into the flour mixture and stir well till evenly combined.
    4. Tip into loaf tin and bake for 40 minutes.
