Chocolate and Marzipan Cookies

    Serves: 24 

    • 55g (2oz) marzipan
    • 115g (4oz) butter
    • 115g (4oz) caster sugar
    • 2 eggs
    • 175g (6oz) plain flour
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon salt
    • 1 teaspoon vegetable oil
    • 1 teaspoon milk
    • 3 - 4 tablespoons cocoa powder
    • 1 (100g) bar of milk chocolate
    • 1 teaspoon hazelnut puree (optional)

    1. Preheat oven to 175 degrees C (Gas Mark 4). Chop the marzipan into small squares; set aside.
    2. In a large mixing bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, mixing the first in before adding the second one.
    3. In a separate bowl mix together the flour, bicarbonate of soda and cocoa so that they are all combined.
    4. Then mix them into the creamed butter and sugar. Mix in the vegetable oil and the milk. Finally add the chopped marzipan and chocolate to the mixture; gently stir to distribute.
    5. Drop by rounded teaspoonfuls onto a non stick baking tray.
    6. Bake in the preheated oven for about 13 minutes. Leave to cool on a cooling rack before eating.

    very yummy. i used dark chocolate since another reviewer said they were too sweet and they turned out GREAT! a little brownie-like. i baked them a bit longer - it's hard to judge when they are done I found  -  27 Nov 2010


    I finally found blocks of marzipan at waitrose and made these! the 13 minutes cook time is very accurate, cookie monster! but these are a little sweet, even for me.  -  12 Sep 2008


    I am not impressed by this. Cookies were to soft, marzipan was wasted as you couldn't taste it. Too much egg? Texture was was not good, taste uninteresting ... there are lots of better cookie recipes around. And the better ones seem to use less egg.  -  15 Mar 2016
