8 rashers streaky bacon, chopped
2 leeks, sliced
1 tablespoon butter
4 tablespoons plain flour
450ml (16 fl oz) milk
200g (7 oz) feta cheese, crumbled
freshly ground black pepper to taste

Place bacon in a large frying pan over medium high heat. Fry for a few minutes then add the leeks. Cook and stir until bacon is browned and leeks are tender. Set aside.
Melt the butter in a saucepan over medium heat. Whisk together the flour and milk, then pour into the saucepan with the butter. Bring to the boil and cook, stirring constantly, until thickened. Remove from the heat and stir in the feta cheese. Mix in bacon and leeks, then season with pepper to taste. Serve over any kind of pasta.
A short pasta shape, such as penne or orecchiette, would work well with this creamy sauce.
