About this recipe: My friend Ross - who is a fantastic cook - gave me this recipe. It's simple, foolproof, filling and it tastes great!

Serves: 4 

  • 2oz / 55g of butter
  • 1lb / 450g of onions, sliced
  • 1 clove of garlic, crushed
  • 1 teaspoon of plain flour
  • 2 pints / 1.2 litres of beef stock
  • 2oz / 55g of Gruyere cheese, grated
  • 1 teaspoon of dry English mustard
  • 4 slices of French bread
  • salt and freshly ground black pepper

  1. Melt the butter in a large, heavy saucepan and slowly brown the onions. This should take about 1 hour, the onions will become super soft and greatly reduced in quantity. Add the garlic after 45 minutes.
  2. Stir in the flour and cook for 1 minute. Add the stock, salt and pepper and stir until boiling then simmer for 20-30 minutes.
  3. Pre-heat the oven to 200 C / Gas mark 6.
  4. Mix the Gruyere with the mustard and some pepper. Spread this on the bread slices and place them on the bottom of an earthenware tureen.
  5. Pour over the soup, the bread will rise to the top. Place in the oven until well browned and bubbling. Wash it down with a nice glass of Beaujolais - it’s a meal in itself.

I am sorry to say that this was not my favorite French Onion Soup recipe. My husband thought that it was really good hence the 4 stars. I just thought that it was kind of flat. Thanks so much for posting the recipe. - 06 Aug 2012
