    About this recipe: This salad goes with simply prepared fish or meat. You can change the vegetables to your taste.

    Ingredients
    Serves: 4 

    • 175g of dried couscous
    • boiling water
    • 1 tsp vegetable stock granules
    • 1 spring onion, finely chopped
    • 1/2 red pepper, finely diced
    • 1/2 orange pepper, finely diced
    • 1 tomato, finely diced
    • 1/2 cucumber, finely diced
    • 1 tbsp lemon juice
    • 1 tbsp extra virgin olive oil
    • pinch of salt

    Method

    1. Pour the boiling water over the dried couscous & vegetable stock.
    2. While this is fluffing, prepare your vegetables.
    3. Stir round the couscous from time to time.
    4. When cooled, add your chopped vegetables, oil & lemon juice. Season to taste.
