About this recipe:
This is a wonderfully simple chunky soup. The dark green colour of the cabbage alongside the tomatoes gives the soup a beautiful colour.
225g (1/2 lb) good quality back bacon, diced
2 large potatoes, peeled and cubed
1 (400g) tin chopped tomatoes
225ml (8 fl oz) chicken stock, or as needed
salt and black pepper to taste
150g (5 oz) thinly sliced dark green Savoy cabbage leaves

Place bacon in a large deep stockpot or saucepan. Cook over medium high heat until evenly brown.
Stir in potatoes, tomatoes and enough chicken stock to cover. Season with salt and pepper. Bring to a boil, reduce heat and let simmer for 20 minutes, or until potatoes are tender.
Stir in cabbage and allow the soup to simmer for a few minutes longer before serving.
I made this recipe as a quick and easy lunch for me at home with young children and something filling for my boyfriend at work. We were both getting sick of sandwiches every day. Lovely easy and very tasty recipe, it is now a firm favourite in our house

I found this soup to be a meal in its self, very filling and satisfying, tastes superb and even better the next day!

Easy, substantial meal, even nicer the following day warmed through. Next time I might try smoked bacon for a change.
