Pot roast sirloin beef in a rich red wine jus

    This is an excellent way to get a great flavoured sirloin joint.

    Serves: 5 

    • 1kg joint of sirloin beef
    • 4 onions
    • 2 carrots
    • 3 cloves garlic
    • 120ml brown stock
    • 200ml red wine, divided
    • 1 sprig of thyme
    • 1 sprig of rosemary
    • 2 bay leaves
    • 1 tbsp vegetable oil
    • salt and pepper
    • 250ml demi-glace

    1. Heat the oil in a casserole and brown the beef. Add the carrots, onion and garlic. Add the stock, 100ml of the red wine and herbs. Place the lid on and and roast in the oven for 2 1/2 - 3 hours at 150 C / Gas 2.
    2. After cooking remove the joint and cover with tin foil. Strain the cooking juices and skim. Heat the juices over the hob and add the other 100ml of the red wine and demi-glace. Check thickness and season.
