About this recipe: This is my first recipe so pull any punches (if you have any) but I think this recipe is quite good for a summer picnic hamper.

Serves: 2 

  • 2 large lemons
  • 375ml water
  • 5 tablespoons sugar
  • 2 large strawberries, hulled
  • ice cubes (optional)

  1. Cut the lemons in half across the middle. Squeeze the juice out with a citrus juicer. You should have about 125ml of juice.
  2. Pour the lemon juice into a pitcher add sugar and water stir until sugar is dissolved.
  3. On a cutting board cut the strawberries in half. Take a fine mesh sieve and put the halves in one at a time over the pitcher. Press the juice out with a small spoon, throwing away any thing left over in the sieve. Stir the contents of the pitcher until well blended and pale pink.
  4. Refrigerate, then serve with lots of ice cubes!

I wasn't having much luck with mashing the strawberries, so I just chopped them up, put them in my mini chopper, and basically ground them up. The darker color is a result of using the ground-up pulp and the strawberry juice. I used Truvia® in place of the sugar (and used less than indicated to suit our taste preference) and ended up with a very flavorful lemonade. The recipe doesn't indicate number of servings, but for us, it was two. - 17 Feb 2015
