Danish almond rice pudding

    This is a delicious vanilla and almond rice pudding dessert that we ate with friends in Denmark. I wanted to recreate it for my family and friends and share the recipe with you!

    Serves: 4 

    • 500ml milk
    • 100g dessert rice
    • 1/4 vanilla pod
    • 10 blanched almonds, coarsely chopped
    • 1 tablespoon caster sugar
    • 300ml whipped cream
    • cooked cranberries, cherries or fruit compote

    1. Bring milk, rice and vanilla to the boil in a saucepan; remove from heat and set aside to cool.
    2. Remove vanilla pod; stir in chopped almonds and caster sugar. Fold in whipped cream until well combined.
    3. Spoon rice pudding into 4 serving glasses or bowls; garnish with cooked cranberries, black cherries or fruit compote.
