Simple tomato sauce for pasta

    This recipe is my family's favourite pasta sauce and they're always asking me to make it. Even picky eaters who say they don't like tomatoes enjoy it!

    Serves: 5 

    • 2 tablespoons olive oil or vegetable oil
    • 2/3 of a red or white onion, finely chopped
    • 3 cloves garlic, minced
    • 2 sprigs fresh rosemary
    • 1 punnet cherry tomatoes, diced
    • 2 (400g) tins chopped tomatoes with juice
    • 1 tablespoon sugar
    • salt and pepper to taste

    1. Heat oil in a medium saucepan over medium-high heat; stir in chopped onions and cook for 2 to 3 minutes, or until soft and golden.
    2. Add the garlic and rosemary; stir for one minute.
    3. Add the tinned tomatoes and diced cherry tomatoes.
    4. Taste and adjust seasonings with sugar, salt and pepper. Simmer for 10 minutes to reduce and intensify the flavour.
