These golden potato cakes are flavoured with cream cheese, spring onions and plenty of black pepper.

600g mashed potatoes
1 teaspoon black pepper
1 teaspoon of salt
2 tablespoons freshly chopped spring onions
200g cream cheese
3 tablespoons plain flour
1 egg, beaten
oil, for frying

Season mashed potatoes with salt and pepper. Add spring onions, cream cheese, beaten egg and flour; mix well to combine.
Using lightly floured hands, take small portions of mixture and roll into 5 or 6 balls.
Heat oil in pan over medium heat; arrange a few of the potato balls in the pan; flatten them down with a spoon and fry until golden on one side. Flip them over and cook until golden on other side. Drain on kitchen roll and repeat with remaining mixture.
