Banana and walnut pancakes

    Banana and walnuts are a great combination in a pancake batter. This recipe only makes a few so feel free to double up!

    • 1 egg
    • 1 ripe banana, finely chopped
    • 1 tablespoon plain flour
    • 1 tablespoon chopped walnuts
    • 1 tablespoon coconut oil, or as needed
    • agave syrup or honey, for serving

    1. Mix egg and chopped banana together in a bowl until well combined; whisk in flour with a fork and fold in walnuts.
    2. Heat coconut oil in pan over medium heat; pour or dollop the batter onto the pan to create 2 pancakes. Cook until pancakes are golden brown on both sides; serve hot with agave or honey.
