Overnight oats with banana and chia seed

    A vegan power breakfast! Oats are combined with mashed bananas, almond milk, cinnamon and chia seeds and left overnight to thicken.

    • 2 very ripe bananas, mashed
    • 4 tablespoons chia seeds
    • 100g oats
    • 1/2 teaspoon cinnamon
    • 320ml almond milk
    • 160ml water
    • 1 tablespoon blueberries, to serve

    1. Mix mashed banana, chia seeds, oats, cinnamon, almond milk and water in a sealable container; mix well to combine and store in the fridge overnight.
    2. Divide into 2 bowls and warm gently in microwave when ready to serve; adding additional almond milk or water if needed. Serve with blueberries.
