Quinoa, tomato and caper salad with lemon dressing

    This quinoa, tomato, red onion and caper salad is tossed with a fresh lemon and mustard dressing. It's also great as a gluten-free side dish served warm.

    Ingredients
    Serves: 6 

    • Dressing
    • 4 tablespoons lemon juice
    • 2 teaspoons mustard
    • 175ml extra virgin olive oil
    • 1 teaspoon of sea salt
    • 1/2 teaspoon of black pepper
    • Salad
    • 300g quinoa
    • 1 red onion, very finely chopped
    • 2 tablespoons finely chopped fresh parsley
    • 175g capers
    • 150g cherry tomatoes, quartered

    Method

      Dressing:

    1. Whisk lemon juice and mustard together in a bowl; add olive oil, salt and pepper and whisk until well combined.
    2. Salad:

    3. Cook quinoa according to the instructions on the packet. Transfer cooked couscous into a bowl and set aside to cool for 5 minutes; fluff with a fork.
    4. Add red onion, fresh parsley, capers and cherry tomatoes; pour dressing on top and toss well to combine.
    5. Serve at room temperature as a side dish, or chill for 1 hour and serve as a salad.
