About this recipe: This is a beautiful creamy tomato soup that is easy to make. Cherry tomatoes, celery and garlic are roasted, then blended with soured cream.


Serves: 2 

  • 600g cherry tomatoes
  • 2 celery sticks
  • 4 cloves garlic, unpeeled
  • 150g soured cream
  • 1 tablespoon extra virgin olive oil

Prep:1hr  ›  Cook:15min  ›  Ready in:1hr15min 

  1. ranstn to 200 C / Gas 6.
  2. Arrange tomatoes, celery and garlic in a roasting tin; drizzle with olive oi. Cook in preheated oven for 1 hour.
  3. Remove and set aside to cool before transferring to a food processor and blending to a smooth soup.
  4. Transfer back into a saucepan; stir in soured cream and heat through before serving.
