Low sugar gingerbread cake

    This is a moderately sweet gingerbread cake without any butter or milk so it's dairy free.

    Serves: 12 

    • 50g margarine
    • 50g light brown soft sugar
    • 6 tablespoons treacle
    • 1 egg
    • 200g plain flour
    • 1 teaspoon salt
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon cinnamon
    • 1 teaspoon ground ginger
    • 1/4 teaspoon ground cloves
    • 180ml boiling water

    1. Preheat oven to 175 C / Gas 3-4. Grease a loaf tin.
    2. Inn a bowl beat margarine and sugar till creamy. Stir in treacle and egg.
    3. In another bowl mix flour, salt, bicarbonate of soda, cinnamon, ginger and cloves. Add to the egg mixture alternating with the hot water. Mix until just combined and evenly moistened, do not overmix.
    4. Tip mixture into loaf tin.
    5. Bake till a tester comes out clean, about 40 to 45 minutes. Let cool in tin for 10 minutes, then unmould onto a wire rack and let cool completely.
