Pasta al pesto (Pasta with pesto)

    In Liguria, pasta with pesto is often served as a starter. Instead of making fresh pesto from scratch, you can of course also used ready made pesto, which makes this a great storecupboard recipe.

    Serves: 4 

    • 1 bunch fresh basil
    • 80g pine nuts
    • 120ml extra virgin olive oil
    • 1 garlic clove, minced
    • salt
    • 200g grated Parmesan cheese
    • 400g pasta of your choice

    1. Process basil, pine nuts, olive oil, garlic and salt in the blender or food processor and process till just smooth.
    2. Tip into bowl and stir in Parmesan.
    3. Cook pasta in plenty of salted water till al dente following packet instructions. Toss with pesto and sprinkle with additional Parmesan cheese if desired.
