      Custard filling:

    1. Whisk egg yolks, caster sugar and flour together until well combined. Add vanilla seeds and milk; stir continuously over low heat until thickened. Set filling aside to cool down, stirring it every so often to prevent a skin forming on top.
    2. Preheat oven to 200 C / Gas 6. Lightly grease and flour a tart tin with a removable base.
    3. Pastry:

    4. Combine flour, baking powder, sugar, lemon zest and salt; mix in egg, milk and softened butter to form a soft pastry dough. Roll out pastry on a lightly floured surface; line base and sides of prepared tart tin, reserving the remaining pastry.
    5. Pour cooled filling on top of pastry base. Roll out remaining pastry to form a thin layer; set on top of filling and crimp edges to seal. Sprinkle pine nuts on top; bake in preheated oven for 25 to 30 minutes.
    6. Cool tart in tin; remove base and place on a plate, then dust with icing sugar.
