Creamy root vegetable soup

    This rich and creamy vegetable soup made with carrots and turnip is great to make on a chilly day!

    Serves: 4 

    • 2 tablespoons butter
    • 1 onion, finely chopped
    • 1 stalk celery, thinly sliced
    • 2 carrots, peeled and chopped
    • 1 small turnip, peeled and chopped
    • 2 tablespoons plain flour
    • 125ml milk, warmed
    • 500ml beef or vegetable stock, or as needed
    • freshly chopped herbs, such as parsley and thyme

    1. Melt butter in a large saucepan over medium heat. Add onion, celery, carrots and turnip; stir well, cover and cook over low heat until vegetables are softened.
    2. Stir in flour and milk until vegetables are coated; add enough stock to cover the vegetables and simmer for 10 minutes.
    3. Mash or puree soup with an immersion blender; season with freshly chopped herbs.
