This rich and creamy vegetable soup made with carrots and turnip is great to make on a chilly day!

Ingredients
Serves: 4
2 tablespoons butter
1 onion, finely chopped
1 stalk celery, thinly sliced
2 carrots, peeled and chopped
1 small turnip, peeled and chopped
2 tablespoons plain flour
125ml milk, warmed
500ml beef or vegetable stock, or as needed
freshly chopped herbs, such as parsley and thyme

Melt butter in a large saucepan over medium heat. Add onion, celery, carrots and turnip; stir well, cover and cook over low heat until vegetables are softened.
Stir in flour and milk until vegetables are coated; add
enough stock to cover the vegetables and simmer for 10 minutes.
Mash or puree soup with an immersion blender; season with freshly chopped herbs.
