Courgettes with garlic and mint

    Fried courgette slices are seasoned with fresh mint, garlic and red wine vinegar. The trick is to dry the courgette slices out as much as possible so they are crispy when fried. Serve with crackers as a starter or as a side dish.

    Serves: 2 

    • 4 courgettes, trimmed and sliced
    • extra virgin olive oil, as needed
    • 120ml white or red wine vinegar
    • 1 garlic clove, minced
    • 1/2 teaspoon salt
    • 4 mint leaves, sliced

    1. Arrange the courgette slices in an even layer on a flat tray; leave to dry out in a warm place for at least 4 or 5 hours.
    2. Heat 2 or 3 tablespoons of oil over medium high heat. Add courgette slices in batches and cook until golden brown, adding more oil if needed; drain slices on kitchen roll.
    3. Mix vinegar, garlic, salt and mint together in a bowl; stir in courgettes and set aside for 30 minutes before serving.
