Crema pasticcera (Italian pastry cream)

    Serves: 4 

    • 3 egg yolks
    • 3 tablespoons caster sugar
    • 3 level tablespoons plain flour
    • 500ml hot milk
    • 1 lemon, zested

    1. In a saucepan, whisk the eggs with the sugar until pale. Slowly add the flour and then the hot milk, stirring constantly.
    2. Place the saucepan on the hob on medium-low heat. Once it starts simmering, lower the heat to a minimum.
    3. Stir till thickened, about 5 minutes. Remove from the heat promptly. Add the lemon zest and leave to cool, then refrigerate.
