Italian potato, caper and olive salad

    Cubes of potato, thinly sliced onion, capers and olives are cooked down, then tossed with red wine vinegar and sugar to make this gorgeous Italian potato salad.

    Serves: 6 

    • 2 tablespoons of extra virgin olive oil
    • 1 onion, thinly sliced
    • 150g pitted olives
    • 50g capers
    • 1kg potatoes, peeled and cubed
    • salt and pepper, to taste
    • 200ml water, or as needed
    • 3 tablespoons red wine viegar
    • 3 teaspoons sugar

    1. Heat oil in a pan over medium heat; add onion, olives, capers and potatoes. Season with salt and pepper, add enough water to allow everything to simmer and cook over low heat until potatoes have softened, about 10 minutes.
    2. Stir in vinegar and sugar for 1 or 2 minutes, or until well mixed; transfer potato salad to a bowl and cool (or chill) before serving.
