Potato croquettes

    This is a traditional snack that I associate with my grandmother making it for us when we were kids.

    Serves: 4 

    • 1kg floury potatoes
    • 30g butter
    • 2 egg yolks
    • 1 whole egg
    • 30g grated Pecorino cheese
    • salt and pepper
    • 1 pinch nutmeg
    • 4 anchovy fillets in oil
    • 1 egg, lightly beaten
    • 100g breadcrumbs
    • extra virgin olive oil for frying

    1. Boil the potatoes in their skins for about 40 minutes. Peel white still warm and push them through a potato press. Add to a bowl with the butter. Mix and leave tp cool.
    2. Add yolks, one at a time, then add the pecorino. Season with salt, pepper grated nutmeg. Mix well and allow to cool completely.
    3. With your hands form small balls. Place a piece of anchovy in the centre of each and enclose it fully with potato mixture. Shape into oblong croquettes.
    4. Dip croquettes in the beaten egg, then dredge breadcrumbs. Fry the croquettes with plenty of oil till golden brown. Degrease on kitchen paper and serve while hot.
