Penne with pancetta and peppers

    A colourful family pasta dish with garlic, peppers and pancetta that can be easily be spiced up with some dried chilli flakes if you prefer some heat!

    Serves: 4 

    • 350g penne pasta
    • 3 tablespoons olive oil
    • 1 green pepper, cubed
    • 1 yellow pepper, cubed
    • 1 clove of garlic
    • 75g pancetta or lean bacon, chopped
    • 50g freshly grated Pecorino

    1. Cook the pasta in a large pot of boiling salted water until al dente; drain, reserving 1 mug of the cooking liquid.
    2. Heat oil in a large pan over medium heat; add garlic clove and stir to soften and flavour the oil. Discard garlic and add pancetta; cook and stir until crispy. Transfer pancetta to a plate lined with kitchen roll; set aside.
    3. Cook peppers in same pan over medium heat until softened, about 6 to 8 minutes; season with salt and pepper. Stir in pancetta and pasta; toss well, adding some of the reserved cooking liquid if needed. Serve hot with freshly grated pecorino.
