This Greek salad is quick to prepare and uses fresh summer ingredients. I like to serve it with tzatziki sauce which takes a bit longer to prepare but goes really well with the salad. Serve with pitta breads on the side.

300g Greek yogurt
2 cucumbers, peeled and sliced
1 tablespoon extra virgin olive oil
1 clove of garlic
1 tablespoon freshly chopped mint
salt and pepper, to taste
3 cucumbers, sliced
1 red onion, thinly sliced
6 ripe tomatoes, quartered
2 tablespoons extra virgin olive oil
2 teaspoons dried Greek oregano
150g feta cheese, crumbled
2 tablespoons pitted black olives
4 pitta breads, toasted and sliced

Mix yogurt, cucumber, olive oil, garlic, freshly chopped mint and salt together in a bowl until well combined; refrigerate tzatziki sauce for flavours to blend, about 1 to 2 hours.
Place sliced cucumber, red onion and tomatoes in a salad bowl; add oil and season with oregano. Mix well; top with feta cheese and olives.
Serve salad with tzatziki sauce on the side and toasted pitta bread.
