Greek salad with tzatziki sauce

    This Greek salad is quick to prepare and uses fresh summer ingredients. I like to serve it with tzatziki sauce which takes a bit longer to prepare but goes really well with the salad. Serve with pitta breads on the side.

    Serves: 4 

    • Tzatziki sauce
    • 300g Greek yogurt
    • 2 cucumbers, peeled and sliced
    • 1 tablespoon extra virgin olive oil
    • 1 clove of garlic
    • 1 tablespoon freshly chopped mint
    • salt and pepper, to taste
    • Greek salad
    • 3 cucumbers, sliced
    • 1 red onion, thinly sliced
    • 6 ripe tomatoes, quartered
    • 2 tablespoons extra virgin olive oil
    • 2 teaspoons dried Greek oregano
    • 150g feta cheese, crumbled
    • 2 tablespoons pitted black olives
    • To serve
    • 4 pitta breads, toasted and sliced

      Tzatziki sauce:

    1. Mix yogurt, cucumber, olive oil, garlic, freshly chopped mint and salt together in a bowl until well combined; refrigerate tzatziki sauce for flavours to blend, about 1 to 2 hours.
    2. Greek salad:

    3. Place sliced cucumber, red onion and tomatoes in a salad bowl; add oil and season with oregano. Mix well; top with feta cheese and olives.
    4. Serve salad with tzatziki sauce on the side and toasted pitta bread.
