Fresh cod fillets are baked on top of sliced, roasted potatoes and topped with parsley, breadcrumbs and olives.

700g potatoes, peeled
salt and pepper, to taste
3 tablespoons extra virgin olive oil, divided
4 skinless, boneless cod fillets
1 tablespoon finely chopped parsley
3 tablespoons breadcrumbs
2 tablespoons pitted black olives

Preheat oven to 180 C / Gas 4.
Soak peeled potatoes for a few minutes in cold water to remove excess starch; cut into thick slices.
Place the potatoes in a large baking dish and season with salt, pepper and 2 tablespoons olive oil; toss everything together and bake in preheated oven for 30 minutes.
Season cod fillets salt, pepper and parsley; arrange fillets on top of potatoes in baking dish. Top with breadcrumbs, black olives and remaining tablespoon of olive oil; bake for 15 minutes, serve immediately.
