Vegan waffles

    This is my vegan recipe for waffles with no egg or milk. You can even throw in fresh berries.

    Serves: 4 

    • 125g plain flour
    • 30g wholemeal plain flour
    • 1/2 tablespoon baking powder
    • 1 teaspoon cornflour
    • 1/2 teaspoon bicarbonate of soda
    • 1 pinch salt
    • 300ml unsweetened soya milk
    • 1 tablespoon apple cider vinegar
    • 2 tablespoons treacle or agave syrup
    • 50g blueberries or raspberries (optional)

    1. Preheat your waffle iron.
    2. In a bowl stir flour, wholemeal flour, baking powder and bicarb of soda and salt till well combined.
    3. In another bowl mix soya milk, vinegar and treacle and add to dry ingredients. Mix till well combined. Fold in berries if desired.
    4. Add batter to hot waffle iron and bake waffles till golden brown and crispy, about 5 minutes per waffle. Serve at once.
