Beignes (Quebec doughnuts)

    This is my grandmother's recipe for beignes, which is the French Canadian version of doughnuts.

    Makes: 24 doughnuts

    • 70g butter
    • 4 eggs, beaten
    • 4 teaspoons baking powder
    • 120ml milk
    • 120ml double cream
    • 1 teaspoon vanilla extract
    • 200g caster sugar
    • 375 to 500g plain flour
    • 1 teapoon salt
    • oil for frying

    1. In a large bowl mix all ingredients except the oil till smooth. Add as much flour as needed so the mixture is firm enough to be rolled out. Cover and refrigerate for 2 hours.
    2. Roll out mixture about 5mm thick on a lightly floured working surface. Cut out 24 doughnuts with a doughnut cutter.
    3. Heat oil to 180 C and fry doughnuts till golden brown. Serve warm or within a few hours.
