Mixed seafood linguine

    This is an incredibly quick and tasty pasta dish made with mixed shellfish, cherry tomatoes, garlic and chilli.

    Serves: 4 

    • 400g linguine pasta
    • 2 tablespoons extra virgin olive oil
    • 2 cloves of garlic, finely chopped
    • 8 cherry tomatoes, halved
    • 1 pinch dried chilli flakes
    • 400g mixed seafood, such as prawns, squid, scallops
    • 120ml white wine
    • salt and pepper, to taste
    • freshly chopped parsley, to taste

    1. Bring a large saucepan of lightly salted water to the boil. Add the linguine and cook according to the instructions on the packet or until al dente; drain, reserving some of the cooking liquid.
    2. Heat oil in a large frying pan over medium heat. Add garlic, chopped tomatoes and chilli flakes; cook and stir until softened, about 2 or 3 minutes.
    3. Stir in seafood; cook and stir for 2 minutes. Pour in wine and simmer. Season to taste with salt and pepper; add pasta and some of the cooking liquid, then toss everything together.
    4. Serve hot with freshly chopped parsley.
