Potato bhaji

    A very popular and spicy side dish. Some people prefer to use potatoes that have been boiled and are completly cool.

    Serves: 2 

    • 6 potatoes, peeled
    • 2 or 3 green chillies
    • 5 or 6 curry leaves
    • a pinch of turmeric
    • 1/2 teaspoon of mustard seeds
    • 2 tbsp of vegetable oil
    • salt to taste.

    1. Place the potatoes into a large saucepan and fill with enough water to cover. Bring to a boil and cook until tender enough to pierce with a fork, about 15 minutes. Drain, cool and cut into cubes.
    2. Heat the oil in a deep frying pan over medium heat. Add the mustard seeds; cook and stir until they start to crackle, about 2 minutes. Stir in the turmeric, curry leaves and chillies. Heat until fragrant, then add the potatoes to the pan. Cook and stir until they are coated with the seasoning. Cover with a lid and leave for about 5 minutes or until potatoes start to brown.
    3. Serve immediately.

    Try adding lemon juice n finely chopped coriander. It ' ll take the curry to another level! Also adding split black gram n chopped ginger in the seasoning will make it taste awesome.  -  11 Jun 2013
