Sausage and herb stuffing

    I have loved so many recipes on this site - I thought I would share one that I love! My mum has made this sausage stuffing every Christmas of my life. Recently I made it for my husband and he loved it too. It is delicious with roast pork, roast potatoes and green veg. Great with leftover turkey and cranberry sauce on boxing day, too!

    Serves: 6 

    • 115g (4 oz) butter
    • 450g (1 lb) good quality British or Irish sausages (skin removed)
    • 1 large onion, chopped
    • ½ loaf crusty bread or a day-old baguette, processed into breadcrumbs
    • 1/2 or 1 teaspoon herbs de Provence

    Prep:15min  ›  Cook:35min  ›  Ready in:50min 

    1. Preheat the oven to 180 degrees C (Gas Mark 4).
    2. Melt the butter in a large saucepan over medium heat. Fry the onion until it starts to soften, add the herbs but be careful not to burn the butter.
    3. Add sausage meat and breadcrumbs to saucepan and stir until evenly blended. Transfer to an ovenproof dish.
    4. Bake in the preheated oven for 30 minutes or until the top goes brown and crunchy.

    A traditional stuffing, but not boring in the slightest! My entire family enjoyed this at Christmas.  -  07 Aug 2008


    Altered ingredient amounts. Used a little olive oil to fry the onion and herbs instead of butter and upped the herbs to 1 1/2 teaspoons. Yum!  -  07 Aug 2008
