Paneer jalfrezie

    This is my closest approximation to one of one of my favourite dishes when I eat out: paneer jalfrezi, a curry with chunks of paneer with onions, tomatoes and peppers.

    Serves: 4 

    • 4 tablespoons vegetable oil
    • 250g paneer, cut into cubes
    • 2 onions, roughly chopped
    • 2 green peppers, seeds removed and cut into strips
    • 1 tablespoon minced garlic
    • 1 tablespoon minced ginger
    • ½ teaspoon ground turmeric
    • 1 teaspoon garam masala
    • ½ teaspoon ground fennel
    • 2 tomatoes, pureed
    • 1 tablespoon tomato sauce or ketchup
    • salt
    • minced coriander leaves for garnish

    1. Heat 3 tablespoons of the oil in a large frying pan or kadhai. Fry the paneer till golden brown. Remove and set aside. Add the remaining tablespoon oil. Add the onions, peppers, ginger, and garlic and fry till onions are browned, about 5 minutes.
    2. Add the turmeric powder, fennel and garam masala. Fry for 30 seconds till fragrant. Add the tomatoes , tomato sauce and salt. Simmer till tomatoes start to thicken and the oil separates from the gravy. Add 125ml water to thin out the gravy.
    3. Add the paneer and cook on high heat till the gravy is thick, about 10 minutes. Sprinkle coriander leaves and serve.
