Cashew kheer

    In this recipe for the Indian pudding kheer, soaked and ground cashews are used as a thickener.

    Serves: 4 

    • 1L milk
    • 120g cashews
    • 100g caster sugar
    • 1 teaspoon almond flakes
    • 1 teaspoon pistachio flakes
    • 1/4 teaspoon ground cardamom
    • 1/4 teaspoon saffron

    1. Place cashews in a bowl and cover with warm water. Leave to soak for 3 to 4 hours. water from cashew nuts, grind to a smooth paste, saving some for garnish.
    2. Drain cashews. Same some for the garnish and puree the rest in your food processor till smooth.
    3. Bring milk to the boil in a large saucepan.
    4. Add sugar and allow to simmer for 10 to 12 minutes, stirring occasionally.
    5. Add cashew nut paste, stir and continue to simmer for 2 to 3 minutes.
    6. Add almonds and pistachios and remove from the hob.
    7. Pour into individual bowls.
    8. In a small bowl mix saffron with 1 tablespoon hot milk.
    9. Chop remaining cashew and sprinkle some on each bowl.
    10. Drizzle a little saffron milk on each serving and use a small pastry brush to distribute it evenly
    11. Serve warm, or refrigerate and serve chilled.
