French onion soup can be easily adapted for vegans using vegetable stock instead of meat stock. If you have both vegans and non vegans at your table, you can always make some toasted bread topped with melted cheese for them.
In a large non adhesive frying pan heat oil over low heat. Add onions and fry slowly for 40 minutes, covered Add a little water if they cook dry so they won't burn.
When the onions are golden and very soft add floyr and stir well. Add stock and stir again, then bring to the boil. Add water then reduce to a simmer and cook for 5 to 10 minutes. Add salt, pepper and nutmeg. Add more water if the soup is too thick. Serve with toasted bread or bread topped with grated melted cheese if not vegan.
