Chorizo stacks (Pila del chorizo)

About this recipe: Slices of chorizo sausage are stacked in a pile with tomatoes, fresh basil and mozzarella. This makes a very nice starter.


Serves: 4 

  • 16 thin slices of good-quality chorizo
  • 4 (115g/4 oz) mozzarella balls
  • 4 large beef tomatoes, sliced
  • 16 fresh basil leaves
  • 16 cocktail sticks (to stop them falling apart)

  1. Pre-heat your oven to 200 degrees C (Gas Mark 6).
  2. For each stack you make, take 4 slices of your chorizo, four slices of tomato and four thick slices of mozzarella plus a few basil leaves.
  3. The base must be as follows: basil, tomato, mozzarella and chorizo and continue this until your slices are used, this allows the flavour from the chorizo to flavour the cheese and tomato.
  4. Now put your cocktail stick through the middle of your stack just to hold it together while cooking.
  5. Place on a baking tray and cook for a max of 10 minutes (have a peek after 5 minutes as some ovens are hotter than others, you will know when they are nearly done as the cheese will just have started to melt on the outside.
  6. When done, take them off of the tray, let them rest for a minute or so, then take the cocktail stick out. They should hold together.
  7. Place them in the middle of a mixed leaf salad and drizzle with some extra virgin olive oil.
