Ingredients
Serves: 4 

  • 1 litre vegetable oil for frying
  • 8 tablespoons plain flour
  • 8 tablespoons polenta (cornmeal)
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 225ml (8 fl oz) brown ale (such as Newcastle Brown Ale)
  • 500g (1 1/4 lb) cod fillets, cut into pieces

Method

  1. Heat oil in deep-fryer to 160 C.
  2. Whisk together the flour, polenta, salt and cinnamon in a large bowl. Mix in ale until no dry lumps remain.
  3. Dip the cod into the batter, allow some of the excess to run off, then carefully place into the deep-fryer. Cook until golden brown and crispy on the outside, and the fish is easily flaked, about 8 minutes. Cook the fish in several batches to avoid over loading the deep-fryer.
