250g (9 oz) plain flour
1 dessertspoon ground cinnamon
1/2 teaspoon salt
125g (4 1/2 oz) butter, softened
100g (4 oz) caster sugar
1 teaspoon vanilla extract
1 egg, beaten

Sift together the flour, cinnamon and salt into a large bowl. Rub in the butter with a fork until mixture becomes crumbly. Add sugar and vanilla extract and mix to a stiff paste. Mix in egg. Knead dough on a floured surface until smooth. Wrap in foil or cling film. Refrigerate for 30 minutes.
Preheat oven to 180 C / Gas mark 4. Grease baking trays. Roll out dough thinly and cut into 24 rectangles.
Bake 12 to 15 minutes or until lightly golden in colour. Let cool on wire rack.
Really easy and quick to make. My kids loved making these and they were gone within minutes of coming out the oven. I will definitely be recommending these to friends! I used cookie cutters to pretty them up a bit and give them some shape. - 20 Dec 2009
A really easy recipe, great to make with kids. A lovely crispy biscuit with a gentle cinnamon flavour. I made these to hang on my christmas tree and they smell great - but as they taste good too, I am not sure how long they will last for! - 13 Dec 2009
