Gougères bourguignonnes (Choux pastry with cheese)

    Serves: 8 

    • 250ml water
    • 1 pinch coarse salt
    • 120g butter, diced
    • 125g sifted plain flour
    • 60g grated Gruyère
    • 4 eggs, lightly beaten

    1. Preheat oven to 200 C / Gas 6. Butter and flour 2 baking trays.
    2. Pour water in a heavy-bottomed saucepan. Heat then add salt and butter and stir till butter is melted.
    3. When it boils, remove from the hob. Add the flour all at once and stir well. Return to the hob for 1 minute and stir till a film forms at the bottom.
    4. Using an electric mixer at medium speed gradually incorporate the eggs and 40g of the grated Gruyere.
    5. With 2 teaspoons, make small heaps on the baking trays spaced 5cm apart. Sprinkle with the rest of the Gruyere.
    6. Baked in the preheated oven till puffed up and browned, or 20 to 25 minutes.
