Ratatouille with cherry tomatoes

    The nice thing about ratatouille is that you can add whatever you have in the fridge. I had bought some cherry tomatoes and decided to add them. The result was great. Ratatouille can be eaten both cold and hot.

    Serves: 6 

    • 1 onion
    • 1 aubergine
    • 2 red peppers
    • 1 courgette
    • 4 tablespoons olive oil
    • 6 roma or medium tomatoes, diced
    • 4 tablespoons tomato puree
    • 250g cherry tomatoes
    • 2 garlic cloves
    • oregano
    • thyme
    • 1 pinch cayenne
    • 1 bay leaf
    • salt and pepper

    1. Wash the vegetables. Peel and slice onion. Cut the aubergine, peppers and courgette into small cubes (do not peel them).
    2. Heat the oil in a large saucepan or pot. Fry onion till softened. Add the aubergine, peppers and courgette. Simmer over low heat for about 10 minutes. Stir occasionally. Add the diced plum tomatoes, whole cherry tomatoes, tomato puree, garlic, herbs and spices and spices. Leave to cook till sauce is thickened, about 20 minutes.
