Oriental king prawn salad

    King prawns are marinated in an Asian-inspired marinade, then stir fried and served on a bed of lettuce to create this flavourful seafood salad.

    • 3/4 tablespoon olive oil
    • 3/4 tablespoon ketjap manis (sweet soy sauce)
    • 3/4 tablespoon soy sauce
    • 1 tablespoon lemongrass powder
    • 1 tablespoon grated ginger
    • 1/2 teaspoon ground coriander
    • 1/2 teaspoon galanga paste
    • 1/2 teaspoon curry powder
    • 300g king prawns
    • 1 red pepper, cubed
    • 2 spring onions, sliced
    • 1/2 tablespoon cornflour
    • 1/2 tablespoon water
    • 1/2 tablespoon lemon juice
    • 1/2 head iceberg lettuce, thinly sliced

    1. Combine olive oil, ketjap manis, soy sauce, lemongrass powder, grated ginger, ground coriander, galangal paste and curry powder together in a bowl; add prawns and marinate for 30 minutes.
    2. Heat wok over high heat; add prawns and stir fry for 1 minute. Add red pepper and spring onions and cook for another minute.
    3. Reduce the heat to low. Combine cornflour, water and lemon juice until smooth; stir into prawns to thicken sauce.
    4. Serve stir-fried prawns and veggies on a bed of sliced lettuce; garnish with spring onions.
