Cottage cheese oat pancakes

    These gluten free pancakes made with cottage cheese, oats, an egg and cinnamon taste like French toast!

    Ingredients
    Makes: 6 pancakes

    • 100g cottage cheese
    • 50g gluten free oats
    • 1 egg, beaten
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon vanilla extract
    • 1/4 teaspoon bicarbonate of soda
    • pinch of salt

    Method

    1. Mix cottage cheese, oats and egg in a large bowl; stir in cinnamon, vanilla extract, bicarbonate of soda and salt until well combined.
    2. Heat a large non stick frying pan over medium low heat; spoon 1 heaped tablespoon of the pancake mixture onto pan for each pancake. Cook pancakes until they start to firm up; flip and cook pancakes on other side until golden brown.
