    About this recipe: I have always loved this recipe! It’s been my all-time favourite. I always make it for busy weekends because it's very quick and easy to make.

    Ingredients
    Serves: 8 

    • FOR THE SALAD
    • 600g (1 lb 6 oz) seedless grapes
    • 2 tablespoons finely chopped parsley
    • 250ml (8 fl oz) fresh squeezed lemon juice
    • 1 tablespoon lemon zest
    • 2 teaspoons honey
    • FOR THE DRESSING
    • 500ml (16 fl oz) grape juice
    • 3 tablespoons honey
    • 5 tablespoons mayonnaise
    • 4 tablespoons freshly squeezed lemon juice
    • water, as needed

    Method

    1. Put the grapes in a medium sized mixing bowl. Sprinkle some chopped parsley on the grapes and then pour in 250ml of freshly squeezed lemon juice. Mix them all together with a wooden spoon. Also add lemon zest and 2 teaspoons of honey for flavour.
    2. For the dressing: pour in 500ml of grape juice into another bowl. Put 3 tablespoons of honey and 5 tablespoons of mayonnaise along with the remaining lemon juice. Add a little if the dressing is too thick. Mix together.
    3. Pour the grape dressing over the salad, toss and serve cold.

    I used half red and half green grapes for color. I wanted a grape salad for an Easter dinner and this was the closest I could find to what I had in mind. The dressing was the real issue with this recipe! The flavor was nice; very fresh and citrusy, not too sweet but a good contrast to the grapes, with the lemon and honey. The problem was that there was way too much of it, and it was so runny that if I had served it as instructed we would have eated the salad out of bowls with spoons! I ended up pouring half of it down the drain, then adding several more spoonfuls of mayo to the dressing to thicken it. That helped, but as we were running out of time to put dinner on the table it wasn't quite to my satisfaction. Still too runny, and the leftovers didn't get eaten.     Simply too much dressing. I cut it back, but not enough. Used a combo of red & green grapes, garnished with some chopped pecans, and it is pretty tasty.  -  08 Oct 2015  (Review from Allrecipes US | Canada)
