Easy vanilla shortbread biscuits

    This vanilla shortbread biscuit recipe is easy enough to make with children - let them stamp out shapes or mix in extra flavours, such as cinnamon or mini choc chips.

    • 225g butter
    • 150g caster sugar
    • 1 teaspoon vanilla extract
    • 1 egg yolk
    • 275g plain flour
    • pinch of salt

    1. Preheat oven to 190 C / Gas 5.
    2. In a large bowl, beat the butter, sugar and vanilla together until lighter in colour.
    3. Add egg yolk, flour and salt; mix until mixture comes together in a dough.
    4. Roll dough out on a lightly floured surface to about 1/2cm thick; cut into desired shapes and place on ungreased baking trays.
    5. Bake in preheated oven for 10 to 15 minutes.
