Pâté de campagne au foie (French liver pâté)

    This country pâté is really easy to make - just blitz all the ingredients in the food processor and pop it into the oven.

    Serves: 20 

    • 500g veal mince
    • 500g pork mince
    • 3 eggs
    • 75g chicken livers, chopped
    • 2 tablespoons minced parsley
    • 2 garlic cloves, minced
    • 2 shallots, minced
    • 200ml white wine
    • 1 pinch ground nutmeg
    • salt and pepper

    1. Put all the ingredients in your food processor and chop finely till homogeneous.
    2. Preheat the oven to 200 C / Gas 6.
    3. Tip the mixture in a loaf tin and press it down to compact it. Place the tin in a larger baking dish and add enough water to the outer dish that it comes up halfway up the side of the tin.
    4. Bake in the preheated oven for 90 minutes. Let cool then refrigerate. Let is cool overnight before cutting.
